PDO cheeses

Although these cheeses are not produced within the geographical area of the Unione they are an integral part of the cuisine of the Langhe area and a key ingredient in both modern and old recipes.

RASCHERA (read the Regulations)

Rind: thin, reddish-grey.

Body: white or ivory-white; rather firm and elastic texture, with very few uneven eyes.

Taste: delicate, characteristically aromatic and moderately sharp and savoury in mature cheese.

Weight: 8-10 kg.

CASTELMAGNO (read the Regulations)

Rind: thin, reddish-yellow, smooth, elastic and even when the cheese is young; brown, hard and

rough when the cheese is mature

Body: pearl- or ivory-white in colo

ur with a fine crumbly texture in young cheese; golden yellow

veined with greenish-blue and firm texture in mature cheese.

Taste: fine, delicate and slightly salty in young cheese; savoury, sharp and piquant after 5 months’

ageing.

Weight:2-7 kg.

TOMA PIEMONTESE (read the Regulations)

Rind: smooth and elastic; its colo

ur ranges from straw yellow to reddish-brown.

Body: white verging into straw yellow, with small scattered eyes.

Taste: sweet and pleasant, with a delicate aroma.

Weight: 1.8 -2 kg.

BRA (read the Regulations)

Rind: smooth and even, light grey in the soft version; hard and firm, with a dark beige colour in

the hard version.

Body: rather firm and elastic with not too scattered, hardly visible eyes.

Taste: pleasantly smelling; the

soft kind is moderately sharp and savoury, while the hard kind is

sharp and very savoury.

Weight: 6-8 kg.

ROBIOLA DI ROCCAVERANO

It is the only Italian PDO cheese that can be made from a blend of three different kinds of milk:

goat’s, cow’s and sheep’s.

Body: fresh, soft an

d firm.

Taste: a peculiar flavour due to livestock’s diet based on forage, brambles, and aromatic plants.

Weight: 250-400 g.

MURAZZANO

It is the only Italian PDO cheese that can be made from a blend of three different kinds of milk:

goat’s, cow’s and sheep’s.

Body: fresh, soft and firm.

Taste: a peculiar flavour due to livestock’s diet based on forage, brambles, and aromatic plants.

Weight: 250-400 g.
